Easy protein pancake

These pancakes keep in the fridge for a few days and can be reheated in the microwave. They’re also good as a healthy low fat snack when on the run.
Ingredients:
5 large / 150ml egg whites
Pinch baking soda or Xanthum gum
1/8 tsp liquid stevia or liqui-flav drops
1/4 tsp cinnamon
Few drops vanilla essence
Spray olive oil x5
4-5 strawberries
Directions:
1. Beat all ingredients except spray oil together in a jug blender or with a whisk.
2. Cook in batches in a non-stick pan with spray oil until brown on both sides. Ensure the mixture is spread in a thin layer in the pan. Keep the heat fairly low, or the pancakes will brown too quickly without cooking in the middle.
3. Slice strawberries, place in the middle of the pancake and roll up. Also nice with a squeeze of lemon juice and some stevia / erythritol sprinkles.
