Homemade coconut rough

A delicious, healthy and natural alternative to store-bought chocolate bars.
Ingredients:
1 Tbsp coconut oil
1 Tbsp cocoa powder (preferably dark organic)
20 drops vanilla liquiflav
or 1/8 tsp stevia and ¼ tsp vanilla essence
1 tsp desiccated coconut (optional)
Directions:
1. Melt coconut oil in the microwave in a small bowl for 20-30 seconds.
2. Slowly stir through cocoa, flavourings and desiccate coconut and stir into a runny paste.
3. Line the bottom of a container with cling wrap and pour liquid chocolate in.
4. Freeze for 10 minutes and enjoy! You can also increase the quantities and pour small amounts into silicon ice trays (don’t fill right up or they’re too solid)

I don’t bother with the coconut (but I know you love it) – just thought I’d mention that it definitely works without. I sometimes add in lucama powder or maca powder to this (replace a little of the cocoa powder with it). If you like really dark bitter chocolate, try raw cacao powder and no stevia or vanilla. So yum!
