Creamy smoked salmon dip

A versatile dip – great to take to a party to serve with raw veges.
Ingredients:
150g smoked salmon flakes
250g extra light (5% fat) cream cheese
250g quark
1/2 tsp ground paprika
1 tsp lime juice
1 Tbsp lemon juice
Salt, pepper and dill to taste
1 medium cucumber, cut into slices (if doing
Chopped coriander leaves for garnish
Directions:
1. Mix all ingredients except cucumber and coriander together in a bowl with a fork until thoroughly combined.
2. Check seasoning and add more if required. Chill in the fridge. Can be kept in the fridge for 2-3 days in a covered container and used as a dip with raw vegetables.
3. If serving on cucumber, chop a medium cucumber and lay out the slices on a plate. Carefully spoon a teaspoon of dip onto each cucumber slice. Top with coriander leaves.

Tip - You can blend the dip in an electric blender for a creamy consistency. You may need to double the amount so it blends properly. This dip is also nice warmed.
