Berry Mousse

A yummy fruity mousse – you can make a double batch for desserts for the whole week! Low carb and low calorie. Contains cottage cheese which is a slow releasing protein, ideal for night time.
Ingredients:
1 Tbsp gelatine
1 cup boiling water
250g cottage cheese
1/2 cup cold water
1/2 tsp stevia
1/2 tsp vanilla essence
200g berries of your choice e.g blackberries or raspberries
Directions:
1. Make gelatine according to the packet directions. Dissolve thoroughly and refrigerate until cool, but not set.
2. Remove from fridge and blend with all remaining ingredients in a jug blender.
3. Pour into 2 individual dishes and set in the fridge overnight.
